Great question. The Canvas Guides describe how a Conference moderator can live caption the session ([url]https://guides.instructure.com/m/4152/l/627526-how-do-i-create-live-captioning-in-a-conference-as-a-moderator[/url]). You might also request a transcript of the recording through a third party service such as 3playmedia.
